I like zucchini too, and had three plants this year. They've been growing really well (it's summer in the southern hemisphere).

We've been throwing it into everything - good way of sneaking veges into the kids, and the neighbours have also benefitted.

We have this quite often, it is quick to throw together, inexpensive and yummy:

In a slowcooker place boneless chicken, black beans (drained & rinsed), green peppers &onions and pour a jar of salsa over the top. I let it cook on low all day and then serve either over rice or wrapped up in tortillas.

Yes, the soup is a condensed Campbell's soup and stove top stuffing mix is just croutons and seasonings. Any kind of condensed cheese soup and any seasoned croutons will work. It is really an easy recipe and it is a family favorite of ours. Meats can be added or you can make meat seperately and have the baked zucchini as a side dish.

Take a can of V-8 juice or its' generic equivalent and pour it in the crock pot. Add to this a bag or two of mixed veggies, some brown rice (raw or cooked) or barley and some beans (either canned or soaked overnight). Add about 1/4 cup Catsup to this for a richer flavor and let everything simmer all day on low. The beans and rice make a complete protein, plus your veggies gives you a filling meal in a bowl. We usually have this with either home made bread and butter or grilled cheese sandwiches. It's a super cheap, super nutritious meal.

Default an old family cheap recipe

heres one we do here on occasion . its called golden eggs on the rod.
first boil 6 to 12 eggs depending on how many you will feed. then either 1 to 2 packs of cream gravy i like the peppered one myself or make your own milk gravy. i cheat cuz my gravy is no good if i dont. remove yolks from hard boiled eggs and set aside. then grate up whites with cheese grater.put grated whites in gravy season to taste. crumble yalks in a bowl and start making toast 2 to 4 slices of toast per serving depending on the appitite. place toast on plate and ladle on gravy mixture likes buscuits and gravy and then finish by sprikling with yolk crumbles.

I have a clean out the fridge recipe.

Bake a large-ish potato.

While it's baking, caramelize some onions very slowly. As the potato cools to the point you can handle it, add any other vegetables you have (including frozen ones) to the caramelized onions and saute.

Shred some cheese (if you have it, not necessary).

Cut the potato in half and fluff the insides. The pour all those yummy veges over it. The caramelized onions really add a great smokey flavor - almost like bacon. Add cheese or sour cream or whatever else you want.

Really really filling and totally yummy.

oh, you can add whatever shreds of leftover meats, fish, etc to it as well.
